Turkey sausage breakfast casserole
Your family gathering will be a hit. It is a great filler when you have the kids over for a slumber party or the softball team is hungry after a game. Be creative and if you have a spicy preference use some green chili or if you choose to be healthier, replace half the eggs in the reciepe with egg beaters. Have fun and enjoy the time you have with family and friends. Remember breakfast is great for dinner too.
1 lb ground turkey sausage
1-1 lb bag tater tots
12 eggs
1/3 cup milk
½ cup shredded cheddar cheese
Preheat oven to 350 degrees.
Brown sausage.
Bake tater tots per directions on bag.
Combine eggs and milk in a large mixing bowl, and whisk together.
Spray bottom of 13x9 glass dish with cooking spray. Place tater tots on bottom of glass dish. Next layer cooked ground sausage on top of the tots, then pour milk and egg combination over top.
Bake for 20 minutes at 350 degrees. Remove from oven to sprinkle cheese over top. Place back into oven and bake an additional 10-15 minutes.
Great casserole for breakfast brunch or dinner!

Food on the run. Here is a quick and easy idea that everyone can enjoy. Shish kabobs can be made to fit all types of tastebuds. Enjoy and have fun outside this summer.
Shish kabobs
4 Skinless Chicken breasts
2 green peppers
2 red peppers
1 red onion
1 large tomato
Italian dressing
Cut chicken and vegetables into large pieces. Place chicken and veggies into large bowl and marinate in 2 cups Italian dressing for 2-3 hours. Place veggies and chicken on skewers as you please and cook on grill or griddle. Turn kabob after 5-6 minutes; each kabob should take about 10-12 minutes to cook.
Makes 8 large skewers.
For something fun, make some fruit kabobs. Cut up some melons, pineapple, apples and strawberries and place fruit on skewers. Use strawberry yogurt as a dipping sauce.

Simple Chicken Dinner
Ingredients
4 boneless skinless chicken breasts
1 jar of salsa verde (green salsa)
1/2 cup Pepperjack cheese
Instructions
Preheat oven to 400°.
Place each piece of chicken in a piece of foil and top with a generous amount of salsa. Fold foil and place on cookie sheet. Bake for 30-35 minutes.
When finished baking open foil and sprinkle each piece w/ approximately 1/8 cup of Pepper Jack Cheese. Let cool for 5 minutes and serve.

Simple Banana Nut Loaf Recipe
1 cup sugar
1/2 cup shortening
2 eggs
2 cups flour
1/2 cup chopped walnuts
1 teaspoon baking soda
3 soft, ripe bananas, mashed
Cream sugar and shortening; add eggs, flour, soda, bananas, and chopped nuts. Pour banana bread batter into 1 greased and floured loaf pan; bake at 325° for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean. This banana nut bread recipe makes 1 loaf.
